2 cups of water (filtered)

1 teaspoon chopped ginger

A few curry leaves

Salt to taste

1 teaspoon mustard oil (for tadka)

Fried or steamed vegetables on the side (eggplant, potato)

🍽️ How to Prepare Pakhala Bhata, Step by Step


Step 1: you’ll cook the rice.

To make your rice softer, always use a little bit more water than you usually would.

After our pizza is cooked, allow it some time to cool off.


Step 2: Soak and Ferment

Put the rice into a clay pot or bowl before eating it.

Cover the rice with filtered water.

Leave the brine in a cool area, covered, for at least 8 to 10 hours.


Step 3: Temper (or Tadka) in the Morning

Heat mustard oil over the heat.

Cook some mustard seeds, add curry leaves, chopped green chilies and ginger to the pan.

Scoop the oil and spices over your soaked rice.


Step 4: Enjoy it when it is ice cold.

Mix the curd and salt into the batter once again.

Serve the dish along with fried potatoes, roasted badi or fried fish.
