Marrying ingredients like nutty quinoa with juicy jackfruit, crispy vegetables and tangy dressing, this is a complete summer bowl. Ingredients (Serves 2)


1 cup cooked quinoa

1 cup shredded ripe jackfruit (or canned young jackfruit, drained)

1/2 cucumber, diced

1/2 red bell pepper, diced

1/4 red onion, thinly sliced

1/4 cup sweet corn kernels (cooked)

2 tbsp chopped fresh cilantro

2 tbsp roasted sunflower seeds or pumpkin seeds


Dressing:

Juice of 1 lime

2 tbsp olive oil

1 tsp honey or maple syrup

1/2 tsp cumin powder

Salt & pepper to taste




How to do It


1. Prepare Quinoa: Rinse quinoa, cook according to directions on package and then fluff and cool.

2. Jackfruit: Try as much as possible to search along with fresh and juicy jackfruit (shredded) or young jackfruit in cans. They do not require any cooking when ripe.

3. Chop Veggies: stir cucumber, bell pepper, onion, corn and cilantro together.

4. Blend Dressing: Whisk lime juice, olive oil, honey maple/cumin, kosher salt and pepper.

5. Mix: Simply add quinoa, jackfruit, vegetables, and dressing in a big bowl, toss to mix well. Mix well.

6. Finish & serves: Sprinkle on some roasted seeds to finish. Eat it right away, or put it in the refrigerator to chill 15 minutes before eating it as a cool salad on a hot summer day.
