1/2 tsp turmeric

1 tsp red chili powder

1 tsp coriander powder

1/2 tsp garam masala

Salt to taste

3 tbsp mustard oil

Fresh coriander for garnish


Instructions:

1. Jackfruit- pressure cook it with 1-2 whistles until tender, but not mushy.

2. Heat mustard oil in a pan and saute onions until they turn golden.

3. Add ginger-garlic paste and cook until the raw odor goes away.

4. Add turmeric, chili powder, coriander powder and salt. Stir well.

5. Add tomato puree and cook till oil floats.

6. Add boiled jackfruit, and mix well. Bake at low heat (10-12 mins).

7. Sprinkle over garam masala and chop with coriander.


Hot rotis or basmati rice can be served with this. It is filling, incredibly tasty, and powered by plants only.




Modern Twist: Jackfruit Tacos 🌮


Ingredients:

1 can of young jackfruit (or 300g raw jackfruit)

1 onion, sliced

1 tsp smoked paprika

1 tsp cumin

Salt and pepper

1 tbsp olive oil

Taco shells

Fresh salsa and avocado for topping


Method:

1. Stir fry jackfruit, onions and spices.

2. Tear the jackfruit with a fork.

3. Stuff in taco shells with salsa and avocado.


It is great for a weeknight meal or a night out with the party!
