How To Make Smoked Jaggery Coconut Millet Bites

Step 1 – Roast Everything Properly

Heat a heavy pan. Dry roast the millet flour on low flame for 5–6 minutes until it releases a nutty aroma. Don’t rush this. If you burn it, the taste is ruined.

Remove and keep aside.

In the same pan, lightly roast the coconut and sesame seeds separately.

Step 2 – Melt the Jaggery

In a thick-bottom pan, melt jaggery with 1 tablespoon of water on low heat. Do not overcook. You want it just melted and slightly sticky.

Turn off the flame once it bubbles gently.

Step 3 – Combine

Add ghee into the melted jaggery. Mix roasted flour, coconut, sesame, ginger powder, cardamom, and nuts into the jaggery mixture.

Mix quickly while warm.

Step 4 – Shape

Grease your palms lightly and press the mixture into a tray. Flatten evenly.

Let it cool for 20–30 minutes. Cut into small cubes.

Optional twist: Briefly hold the tray over open flame smoke for 20 seconds to give a subtle smoky winter aroma. That’s what makes this unique.
