2 cups thick curd (yogurt), whisked smooth

2 tbsp ghee

1 tsp fennel powder

1 tsp dry mint, crushed

1 small cinnamon stick

2 cloves

Salt to taste

2 cups water

1 tsp rice flour (optional, for thickening)

1. In a bowl, whisk curd until smooth. Add 2 cups water and whisk again. Optional: mix in rice flour for a silkier texture.

2. Heat ghee in a pan. Add cinnamon, cloves, and bay leaf. Let them release aroma.

3. Add fennel powder, ginger powder, and crushed dry mint. Stir for a few seconds on low heat.

4. Slowly pour in the whisked yogurt mixture, stirring continuously to prevent curdling.

5. Cook on low flame for 6–8 minutes, stirring gently. Do not boil.

6. Add salt to taste. Simmer until slightly thickened.

7. Drizzle a little ghee and garnish with more dry mint before serving.


Serve warm or room temperature with steamed rice or jeera rice.
