Introduction

Every winter, people rush toward the usual comfort foods — gajar halwa, khichdi, dry fruit laddoos. But here’s the problem: most of these are heavy, sugar-dense, and not exactly gut-friendly when eaten daily.

Now imagine something warm like halwa, lightly sweet like kheer, but built with ingredients that don’t slow you down — instead, they quietly improve digestion, immunity, and energy levels.

That’s where Smoked Jaggery Orange Rice comes in.

This is not a dessert.

Not exactly a breakfast either.

And definitely not a traditional pulao.

It’s a slow-cooked winter rice bowl made with:

freshly extracted orange juice

raw jaggery

lightly toasted rice

and finished with a subtle smoked infusion

Ingredients

1 cup short-grain rice

1 cup fresh orange juice (not packaged)

½ cup grated jaggery

1 tablespoon ghee

½ teaspoon cinnamon powder

2 cloves

4–5 soaked almonds (sliced)

1 teaspoon orange zest

Pinch of salt

1 small piece of charcoal (for smoking)

Few drops of ghee for smoke infusion


Instructions

Wash the rice thoroughly and soak it for 20 minutes.

Heat ghee in a pan and add cloves. Let them release their aroma.

Add soaked rice and lightly toast for 2–3 minutes on low flame.

Pour in the fresh orange juice along with ½ cup water.

Cover and cook until the rice becomes soft.

Add grated jaggery, cinnamon powder, orange zest, and a pinch of salt. Mix gently.

Cook on low heat until jaggery melts completely.

For the smoked finish:

Place a small steel bowl in the center of the rice.

Heat the charcoal directly on flame until red hot.

Place it inside the steel bowl, add a few drops of ghee on top, and immediately cover the pan with a lid.

Let the smoke infuse for 2–3 minutes.

Remove the bowl and fluff the rice gently.
