🧂 Ingredients


Bottle Gourd (Lauki) – 2 cups, peeled and chopped

Fresh Coconut – ½ cup, grated

Curry Leaves – 8–10

Green Chili – 1

Ginger – 1 inch

Cumin Seeds – 1 tsp

Mustard Seeds – ½ tsp

Turmeric – ¼ tsp

Salt – to taste

Water – as needed

Coconut Oil – 1 tsp (optional)

Lemon Juice – 1 tsp (for finishing)

Fresh Coriander – a handful, chopped





🔪 Instructions


1. Steam or Boil the Lauki until soft but not mushy. Set aside.

2. Grind the coconut, green chili, ginger, and a bit of water to make a smooth paste.

3. In a pan, heat coconut oil (or skip for oil-free), add mustard seeds and cumin. Let them splutter.

4. Add curry leaves and sauté for 30 seconds.

5. Stir in the coconut paste and cook for 2–3 minutes until aromatic. 

6. Add turmeric, salt, and boiled lauki. Mix gently.

7. Add a splash of water if needed and simmer for 5 minutes.

8. Turn off the heat, finish with lemon juice and fresh coriander.
